Greek Revani
Revani is a traditional Greek dessert made with semolina flour, sugar, eggs, and flavored with lemon or orange zest. It is soaked in a fragrant syrup made from sugar, water, and citrus juice. Revani is often garnished with almonds or shredded coconut. It offers a moist and aromatic dessert option, representing the use of semolina and citrus flavors in Greek sweets and the culinary heritage of the Mediterranean region.
Instructions
Preheat the oven to 180°C/350°F. Grease a 9-inch cake pan and set aside.
Reduce heat to low and simmer for 10 minutes until the syrup thickens.
Remove the cake from the oven and let it cool for 5 minutes.
Pour the syrup over the warm cake, letting it soak in.
Allow the cake to cool completely before serving.
In a mixing bowl, cream the butter and sugar together until light and fluffy.
Beat the eggs and add them to the mixture, one at a time.
Add the semolina, baking powder, and lemon zest to the mixture and stir well.
Pour the batter into the prepared cake pan and smooth out the top.
Decorate with almonds on top of the batter.
Bake for 35-40 minutes, or until the top is golden.
While the cake is baking, make the syrup by heating the water and sugar in a saucepan.
Stir until the sugar dissolves and bring it to a boil. Then, add lemon juice.
