Zaru Soba (Japanese - Main Course) Recipe

Cold buckwheat noodles served on a bamboo mat (zaru) with a dipping sauce, along with toppings such as sliced green onions and grated daikon radish. Zaru Soba is a refreshing and light Japanese main course, perfect for hot summer days.
Ingredients:
  • Buckwheat soba noodles - 7 oz (200 g)
  • Water - 4.2 cups (1 liter)
  • Soy sauce - 2/3 cup (150 ml)
  • Mirin - 1/3 cup (75 ml)
  • Sugar - 2 tbsp (25 g)
  • Grated daikon radish - 3.5 oz (100 g)
  • Sliced green onions - 2-3
Instructions
  • Bring a pot of water to a boil, and cook the soba noodles according to the package instructions. Drain and rinse the noodles under cold water until they are cool.
  • Cut a handful of ice cubes into small pieces and place them in a bowl. Place the bowl in the freezer to chill while you prepare the dipping sauce.
  • In a small pot, combine the soy sauce, mirin, sugar, and 100ml of water. Bring the mixture to a boil, then reduce the heat and let it simmer for about 5 minutes until it thickens slightly. Turn off the heat and let the sauce cool to room temperature.
  • Once the dipping sauce has cooled, take the bowl of ice cubes out of the freezer and pour the sauce over the ice to keep it chilled.
  • Assemble the zaru soba by placing a bamboo mat (zaru) on a plate, and placing the cooked soba noodles on top of the mat.
  • Serve the dipping sauce alongside the noodles, and top the noodles with sliced green onions and grated daikon radish.
  • To eat, take a small amount of noodles with your chopsticks, dip them into the sauce, and enjoy!
