Dumplings (Jiao Zi) (Chinese - Appetizer) Recipe

Steamed or boiled dough pockets filled with a variety of ingredients such as meat, vegetables, or seafood. They come in various shapes and sizes, and are often served with soy sauce or a dipping sauce.
Ingredients:
  • All-Purpose Flour - 3⅓ cups (400 g)
  • Water - 1 cup (200 g)
  • Ground Pork - 0.44 lb (200 g)
  • Shrimp - 0.33 lb (150 g)
  • Scallions - 2
  • Ginger - 1 piece
  • Soy Sauce - 1 tbsp
  • Sesame Oil - 1 tbsp
  • Salt - 1 tsp
  • Sugar - 1 tsp
  • White Pepper - ¼ tsp
  • Cornstarch - 1 tbsp
  • Water Chestnuts - 0.22 lb (100 g)
Instructions
  • In a large mixing bowl, combine the flour and water. Mix until a dough forms. Knead the dough for 10 minutes until smooth. Cover the dough and let it rest for 30 minutes.
  • In a separate mixing bowl, combine the ground pork, shrimp, scallions, ginger, soy sauce, sesame oil, salt, sugar, white pepper, and cornstarch. Mix well until everything is combined. Add the water chestnuts and mix again.
  • Take a small ball of dough and flatten into a circle. Use a rolling pin to thin out the edges of the circle. Place a spoonful of filling in the center of the circle. Fold the dough in half and pinch the edges together to make a crescent shape.
  • Repeat step 3 until all the dough and filling is used up.
  • To steam the dumplings, place them on a steamer basket lined with parchment paper. Steam the dumplings for 15-20 minutes until fully cooked. To boil the dumplings, bring a pot of water to a boil. Add the dumplings and cook for 8-10 minutes until they flo
