Puerco en Salsa Verde (Mexican - Main Course) Recipe

Succulent pieces of pork simmered in a tangy and vibrant green salsa made with tomatillos, green chilies, onions, and cilantro. It's a classic Mexican dish with a delightful kick of heat.
Ingredients:
  • Pork shoulder - 2.2 lb (1 kg)
  • Tomatillos - 1 lb (500 g)
  • Green chilies - 4
  • Onion - 1
  • Garlic - 2 cloves
  • Cilantro - 1 cup
  • Chicken broth - 1 cup
  • Olive oil - 2 tbsp
  • Salt and pepper - to taste
Instructions
  • Preheat oven to 350°F (180°C).
  • Cut pork shoulder into 1-inch pieces and season with salt and pepper.
  • Heat olive oil in a large oven-safe pot or Dutch oven over medium-high heat. Add pork pieces and brown on all sides, about 5 minutes.
  • Remove pork from pot and set aside. Add chopped onion and garlic to pot and sauté until onion is translucent, about 3 minutes.
  • Add tomatillos, green chilies, and chicken broth to pot. Bring to a boil, reduce heat, and simmer for 10 minutes.
  • Using an immersion blender or transferring to a blender, puree the contents of the pot until smooth.
  • Add pork back to pot and cover with the green sauce. Cover with a lid and transfer to the preheated oven for 1 1/2 to 2 hours.
  • Remove from oven and garnish with chopped cilantro before serving.
