Almond Jelly (Xing Ren Dou Fu Fa) (Chinese - Dessert) Recipe

A soft and delicate jelly dessert made from almond milk, agar-agar, and sugar. It has a subtly sweet almond flavor and is often served with fruit or syrup.
Ingredients:
  • Almond milk - 2 cups (500 ml)
  • Water - 1 cup (250 ml)
  • Agar-agar powder - 2 tsp (8 grams)
  • Sugar - 1/3 cup (80 grams)
Instructions
  • In a saucepan, combine almond milk, water, agar-agar powder, and sugar. Bring to a boil while stirring constantly.
  • Reduce heat and simmer for 5 minutes until agar-agar powder is dissolved.
  • Remove the saucepan from heat and let it cool for a few minutes but not until set.
  • Pour mixture into a jelly mould or any preferred container.
  • Let it cool to room temperature before transferring to the refrigerator to set for at least 2 hours.
  • Once set, cut the jelly into small cubes or any desired shape.
  • Serve chilled with fruit or syrup as desired.
