Karidopita me Meli (Greek - Dessert) Recipe

Karidopita me Meli is a luscious Greek walnut cake made with honey and topped with a thick layer of honey glaze.
Ingredients:
  • Walnuts - 9oz (250g)
  • Butter - 7oz (200g)
  • Sugar - 7oz (200g)
  • Breadcrumbs - 5.3oz (150g)
  • All-purpose flour - 5.3oz (150g)
  • Baking powder - 2 tsp
  • Ground cinnamon - 2 tsp
  • Ground cloves - 1/2 tsp
  • Salt - 1/4 tsp
  • Eggs - 4
  • Milk - 7 fl oz (200ml)
  • Honey - 7oz (200g)
  • Water - 7.6 fl oz (225ml)
  • Lemon juice - 1 tbsp
  • Orange zest - 1 tbsp
Instructions
  • Preheat the oven to 180°C (350°F). Butter and flour a round cake pan.
  • Bring the mixture to a boil, then reduce the heat and simmer for 5 minutes.
  • Remove the cake from the oven and let it cool for 5 minutes.
  • Pour the hot honey glaze over the warm cake, allowing it to soak in.
  • Let the cake cool completely in the pan before serving.
  • Once cooled, remove the cake from the pan and transfer to a serving plate.
  • Slice and serve the Karidopita me Meli, drizzling any remaining honey glaze on top as desired.
  • In a food processor, pulse the walnuts until finely ground. Set aside.
  • In a large mixing bowl, cream together the butter and sugar until light and fluffy.
  • Add the ground walnuts, breadcrumbs, flour, baking powder, ground cinnamon, ground cloves, and salt. Mix well.
  • Beat in the eggs, one at a time, until fully incorporated.
  • Gradually add the milk and mix until the batter is smooth and well combined.
  • Pour the batter into the prepared cake pan and smooth the top.
  • Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  • While the cake is baking, prepare the honey glaze by combining honey, water, lemon juice, and orange zest in a saucepan.
