Ants Climbing a Tree (Chinese - Main Course) Recipe

A Sichuan dish made with vermicelli noodles, ground meat, chili bean paste, and other flavorful ingredients. The noodles resemble ants crawling on twigs, hence the name.
Ingredients:
  • Vermicelli noodles - 3.5oz (100g)
  • Ground meat - 7oz (200g)
  • Chili bean paste - 2 tbsp
  • Soy sauce - 2 tsp
  • Sugar - 1 tsp
  • Oil - 2 tbsp
  • Garlic - 2 cloves
  • Ginger - 1 knob
  • Scallion - 1 stalk
Instructions
  • Soak the vermicelli noodles in warm water for 10-15 minutes until they are soft, then drain and set aside.
  • In a bowl, mix together the ground meat, soy sauce, and sugar.
  • Heat the oil in a wok over high heat. Add the garlic, ginger, and scallion, and stir-fry for 30 seconds until fragrant.
  • Add the meat mixture to the wok and stir-fry until the meat is cooked through and crumbly, about 5 minutes.
  • Add the chili bean paste to the wok and stir-fry for another minute until fragrant.
  • Add the vermicelli noodles to the wok and stir-fry for another 2-3 minutes until the noodles are evenly coated with the sauce mixture.
  • Serve the ants climbing a tree hot, garnished with additional scallion if desired.
  • Note- The dish can also be made with ground pork or beef. The chili bean paste can be adjusted to taste, depending on how spicy you like the dish.
