Nougat (French - Dessert) Recipe

A confectionery made with sugar or honey, roasted nuts (typically almonds or pistachios), and sometimes dried fruits. Nougat has a chewy texture and is often enjoyed as a sweet treat or given as a gift.
Ingredients:
  • Sugar - 17.6 ounces (500 grams)
  • Honey - 17.6 ounces (500 grams)
  • Glucose syrup - 7 ounces (200 grams)
  • Egg whites - 2
  • Almonds - 10.6 ounces (300 grams)
  • Pistachios - 3.5 ounces (100 grams)
  • Dried fruits (optional) - 7 ounces (200 grams)

Instructions
  • Preheat the oven to 180°C (356°F). Spread the almonds and pistachios on a baking sheet and roast them for 10-15 minutes or until lightly browned. Remove from the oven and let them cool down.
  • In a large saucepan, combine the sugar, honey, and glucose syrup. Heat over medium heat, stirring frequently, until the sugar dissolves and the mixture starts to boil.
  • Using a candy thermometer, monitor the temperature of the mixture until it reaches 150°C (302°F).
  • In a separate bowl, beat the egg whites until stiff.
  • Remove the syrup mixture from the heat and gradually fold it into the egg whites, stirring constantly. Continue to mix until the mixture becomes thick and glossy.
  • Add the roasted nuts and dried fruits (if using) to the mixture and stir to combine.
  • Pour the mixture into a lined square or rectangular baking dish. Smooth out the top with a spatula.
  • Allow the nougat to cool completely at room temperature or in the refrigerator. Once it has hardened, remove it from the dish and cut it into small squares or bars.
  • Serve and enjoy your homemade nougat! Keep any leftovers in an airtight container at room temperature for up to a week.
