Firni

Firni is a creamy and aromatic Afghan rice pudding made with rice, milk, sugar, cardamom, and rose water. The rice is cooked until soft and tender, then simmered in milk and sugar until the pudding thickens. It is often garnished with sliced almonds, pistachios, or rose petals, adding a touch of elegance to this beloved dessert.

Instructions

Rinse the rice well under cold water until the water runs clear. Soak the rice in water for at least 30 minutes, then drain and set aside.

In a large saucepan, bring the milk to a boil. Add the soaked and drained rice to the milk and stir well.

Reduce the heat to low and let the rice cook in the milk, stirring occasionally to prevent sticking, until the rice is soft and tender, about 20 minutes.

Add the sugar, cardamom, and rose water to the saucepan and continue cooking, stirring frequently, until the pudding thickens, about 10 minutes.

Remove the saucepan from the heat and let the firni cool to room temperature. Once cooled, refrigerate the firni for at least 2 hours to chill.

Garnish the chilled firni with sliced almonds, pistachios, and rose petals before serving.
